Il Laboratorio del Gelato is conceived of as a Lab, where chefs experiment to create small batch ice cream from only the freshest ingredients. The feeling is fresh, crisp, clean, and collaborative.

A clear glass wall with neon signage separates the sales counter from the production factory, putting the rainbow of ingredients and production on full view. Sharing this process with the customer allows them to see the freshness of the gelato and creates a sense of participation that goes beyond the transactional purchase.
